Imulsi-Fi™ is an all-natural emulsion
stabilizer made from orange pulp. Imulsi-Fi’s distinctive cellular
structure and unique protein and polysaccharide composition give
the biopolymer an amphiphilic character (both hydrophilic and lipophilic
properties), enabling Imulsi-Fi to lower the interfacial tension
and stabilize the oil/water interface very efficiently at ambient
temperature. These stable oil in water mixtures, ranging in size from 1 to 50 microns,
are pH, heat, and freeze/thaw stable, showing no phase separation
through 60-day accelerated stability testing. Imulsi-Fi exhibits
highly desirable sensory characteristics, has a neutral odor, is non-allergenic and non-GMO.
